This low-calorie recipe is easy and great for meal prep with sustainable ingredients. Each serving is 166 calories and 30 g carbohydrate. Can be perfectly paired with your choice of protein.
Ingredients
1 cup oats
2 Tbsp raw shelled pistachio, chopped
2 Tbsp bittersweet chocolate
1 Tbsp chia seed
1 Tbsp raw pumpkin seed, shelled
1 Tbsp raw pecan, chopped
1 tsp ground flax meal
1 ½ tsp sodium-free Cajun seasoning
1 tsp curry
½ tsp smoked paprika
¼ tsp salt
1/8 tsp garlic powder
1/8 tsp cayenne pepper
2 Tbsp maple syrup
1 Tbsp canola oil
1 tsp vanilla extract
Directions: Preheat oven to 325°F degrees.
In a medium bowl, combine oats, pistachios, chocolate, chia seeds, pumpkin seeds, pecans, and flax meal. In a small bowl, whisk Cajun seasoning, curry, paprika, salt, garlic powder, cayenne pepper, maple syrup, canola oil, and vanilla extract. Slowly pour wet mixture into dry mixture until well combined.
Spread oat mixture over a parchment lined cookie sheet. Bake for 10 more minutes then stir. Bake for an additional 5-10 minutes until lightly toasted.
Tip: Every oven is different; smell for the nutty aroma and look for toasted color to see if granola is finished. Omit cayenne pepper if you prefer less heat.
