Dark Chocolate Avocado Truffles

These decadent truffles are made with a just a handful of ingredients, such as dark chocolate, vanilla and … creamy avocado! Avocados are rich in healthy plant-based fats and replace the traditional butter in this recipe.

Ingredients

⅓ cup mashed, ripe avocado (about ¾ small avocado) or packaged avocado puree
6 ounces (1 cup) bittersweet chocolate chips (60% cacao)
1 teaspoon vanilla extract
⅛ teaspoon coarse salt
Nuts, cocoa powder, powdered sugar, melted chocolate (optional)

Directions

Fit a small food processor with steel knife blade, place avocado in processor and pulse until smooth; set aside.

Place chocolate in microwave-safe bowl; heat at 50% power for 1 minute.  Stir and heat an additional 30 seconds at 50% power.  Allow mixture to stand 1 minute; stir until smooth, microwave at 30 second intervals  at 50% power if needed. 

Add vanilla and salt to chocolate and stir in avocado until fully mixed.  

Place in refrigerator for about 20 minutes, or until slightly firm to the touch. Use a tablespoon to scoop into balls and roll between palms of hands to form a smooth ball, then roll into cocoa powder and place on parchment paper.  Serve immediately or store in freezer. 

Makes 18 balls

Per ball: 67 Calories, 0.5 mg Cholesterol, 4.6 g Fat, 2.2 g Saturated Fat, 19 mg Sodium, 5.5 g Carbohydrate, 1 g Fiber, 1 g Protein

 

Chef's Tip: If making truffles for a large group, triple recipe and spread truffle mixture into 8"x 8" pan lined with nonstick foil. Cover and refrigerate until mixture is firm; cut into small squares and serve in candy papers.
